Apple Orange Bread

Ingredients:
- 1 cup Orange Juice
- 2 large eggs
- 2/3 cup canola oil
- 3 cups grated apple, unpeeled (~ 3 apples)
- 1 cup light brown sugar, packed
- 1 tablespoon vanilla extract
- 1 tablespoon orange zest
- 2 cups white whole-wheat flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- ¾ teaspoon ground cloves
- ½ cup nonfat plain Greek yogurt
Method:
1.- Preheat the oven to 375 degrees Fahrenheit. In a largemixing bowl, beat the eggs and canola oil with a fork. Add the grated apple, brown sugar, vanilla extract, orange zest and FLOJ. Mix well with a mixing spoon.
2.- In a medium mixing bowl, combine the flour, bakingsoda, baking powder and cloves. Pour the contents of the flour mixture into the large mixing bowl and mix the wet and dry ingredients with a wooden spoon orother mixing spoon. Using a spatula, gently fold in the Greek yogurt.
3.- Pour the batter into 2 standard loaf pans that havebeen prepared with nonstick baking spray oradditional canola oil. Bake until a cake tester placed into the center of the loaves comes out clean, 30 minutes. Cool in the pan on a wire rack for about 10 minutes before removing and allowing to coolfurther directly on the rack.
