Carrot & Ginger Soup
SERVES: 4 TO 5
COOKS: IN 35 MINUTES
DIFFICULTY: EASY
 
Ingredients:
2 cups yellow Onion.
1 ½ lbs. Carrot.
1 tsp. Ginger.
3 tsp. butter.
2 cups chicken stock.
2 cups water.
3 large strips of Orange Zest.
1 tsp. Salt.
Method:
1.- Chop the onion into cubes, the carrot into slicesand the ginger very finely.
2.- Melt the butter in a saucepan over medium / highheat and then add the onion and carrot.
3.- Cook for a couple of minutes, stirring constantly, then add the salt.
4.- Add the chicken stock, water, ginger, the orangestrips and bring to simmer.
5.- and cook for 20 minutes.
6.- Remove the orange peels and purée the soup.
7.- Add salt and enjoy!
